Honey-Chipotle Chicken

Ingredients
2–3 chicken breasts
2 chipotle peppers in adobo (plus 1–2 tsp adobo sauce)
2 tbsp honey
1 tbsp lime juice
1 tsp smoked paprika
1 tsp garlic powder (or 2 cloves minced)
1 cup chicken broth (important for Instant Pot)
½ tsp salt
¼ tsp pepper
Add ½ tsp cumin for a smokier flavor (optional)
Add 1 tbsp tomato paste for extra thickness (optional)
Add more honey if you want sweeter, more peppers if you want spicier (optional)
Instructions

    Blend the sauce In a bowl or small blender, mix: Chipotles, honey, lime, paprika, garlic, salt, pepper, Chicken broth.

    Add to Instant Pot Place chicken breasts in the pot. Pour sauce over them.

    Pressure cook Set to High Pressure – 8 minutes (for average 7–8 oz breasts). If thick/large: 10 minutes If thin: 6 minutes

    Natural Release for 5 minutes Then quick release.

    Thicken the sauce (important + delicious) Remove chicken. Switch the Instant Pot to Sauté. Add 1 tsp Arrow Root starch and stir continuously to thicken Simmer until the sauce thickens into a glaze (5–7 min). Add a little extra honey or lime if you want to adjust the flavor.

    Coat the chicken Slice or shred, then toss in the thickened sauce.
Notes: Served over Coconut Cilantro Lime Rice.
