Cilantro Coconut Lime Rice

Ingredients
1 cup Basmati rice rinsed thoroughly
1 Can Thai Kitchen Coconut milk full-fat (15 oz can)
¼ cup Water
¼ cup fresh Cilantro (4 tsp dried)
1 Lime juiced
Salt to taste
Instructions

    Thoroughly rinse your rice until the water runs clear to remove excess starches. Do not skip this step.

    Add rice, water, coconut milk, and salt to the Instant Pot. Stir to combine.
  3. 3
    Use the 'Rice' function on the instant pot and cook for 12 minutes.

    Natural Release for 10 minutes or until the pin drops.

    Remove the lid and stir the rice.
  6. 6
    Juice 1 lime and finely chop cilantro.

    Add cilantro and lime juice. Stir until well combined.
